A well-trained and professional staff is important to the success of any business and essential to any juicing business.  It requires a little bit of an investment of time and energy, but having a training plan can have major effects on your bottom line.

A well trained staff knows how to get the most out of your machine

This includes both extending the life of the machine and getting higher yields from your produce.   A broken machine can be a big expense in parts and service and lead to lost profits in dead time.  From our experience up to 90% of broken equipment comes from user error, which can be prevented.

  • * Most machines come with user manuals. This should come with any juicer you buy and it is important to make sure everyone who uses the machine is knowledgeable in the manual.
  • * See if you can get a live demo for hands on experience on the proper use of your machine. YouTube videos can also be great tools for this as well.  We keep our YouTube channel packed with important videos of demos and proper use of almost all of our equipment.
  • * Some equipment requires regular service (for example Nutrifaster & Sammic CKE machines need regular blade sharpening, belts can wear out on most machines). Don’t hesitate to ask what these regular maintenance routines are, and make sure to set regular reminders as they can lead to major problems if ignored.
  • * Know your warranty – most new machines come with a warranty of a year or more, and even some used machines have distributor warranties.

A well trained staff can better serve your customers

A staff that is knowledgeable in your product can help promote your products in store.  If for example they can explain the health benefits of different juices on your menu it adds value to your customer.

Steps for a Successful Juice Bar – Part 2/4: A Well Displayed Product

 

 

 

In an earlier edition we covered what goes into the decision of what machine to buy CLICK HERE.  In this 2nd edition of “Steps for a Successful Juice Bar” we will cover how to properly display your product.  Small changes in display can have major effects on customer decisions, leading to more sales:

These are special presentations of your products used to attract and entice your customers.  This can include signs, menus, props, and how your product is set up for sale.

They should be clearly visible, within customers
reach, clean and well lit. This is self-explanatory, but also the first step to any successful display. Make sure that your display fulfills these minimum requirements before going forward.

Keep to a theme:  If you are organic; consider a display with earthy tones complete with lush natural fruits and vegetables. Remember to stay focused on a singular theme as you do not want to be too cluttered.

self serviceSigns & menus: Figure out who your target audience is and make sure your signage speaks to them. Are they health nuts and find nutritional information important or is organic the most important thing?  Are most of your customer’s college students or business professionals?  Different customers respond better when you speak their language.  Also, make signs stand out, and use a font and size that are easy to read.

“No Barrier Access”: Remove all barriers to your product – this allows the customer to reach out touch, and feel your product, and removes unneeded steps to your customers purchasing decision. Learn more HERE.

Clear Bottles and Labels: Using clear bottles is an easy way to improve your product’s image premium-clear-bottlesleading to more sales.  This is because customers can see the quality of your juice first hand.  If it looks delicious and ready to eat, it will encourage customers to buy.  Remember to use labels that show your logo and use words and imagery succinctly to give the message you are trying to convey to your customers.

Show off new products, not only your best sellers: Mix it up, and try and introduce some of your regular customers to new concoctions.

We just finished our event at the 2016 Western Foodservice Expo in Los Angeles, CA (see video).  We had representatives from our offices in Miami, Los Angeles, and Cleveland sharing their knowledge on the ever changing juicing industry including fruit infused water, eco-friendly juicing options and new tidbits on health functions of the new products available for the industry.

Fruit Infused Water – What you need to know

Fruit infused water

Fruit infused water is the new craze in the health food world, and can be an easy cash cow for juice bars, bottling operations, restaurants, health food stores and supermarkets. This article will explain how easy it to make as well as all the benefits for your customers.

Making fruit infused water is simple!

  1. 1) Use cold or room temperature, filtered water (See Apiqe water system). The same rule in juicing applies; you want to avoid any heat as it destroys essential nutrients in the fruit.
  2. 2) Select the fruits you wish to use. Almost any fruit can be infused, and you can either create your own mix with your favorites or search for ideas online. Most fruits can be cut in any way, except that hard fruits should be cut thin, and leafy greens should be torn.
  3. 3) Place the fruit at bottom of pitcher, and weigh the fruit down with ice. Add water and allow the fruit to “infuse” for no more than 2 hours, as after this point bacterium may start to form.

The health benefits of fruit infused water are many, making it one of the healthiest beverage choices.

What Juicer To Use

There are 3 basic types of processes juicers use.  Each has its own advantages and disadvantages, which can be ideal depending on the type of operation you wish to run.

Automatic citrus juicers have great yields, are quick and easy to use, taste amazing and are very affordable but are limited in that they can only juice limes, lemons, oranges, grapefruits, and pomegranates. 

Even then, different units specialize in different citrus products depending on their count per box, shape, thickness of skin, juiciness, etc. The Zummo Z01, Z06, Z14 and Z40 are all examples of great models of automatic citrus juicers to consider – but remember to ask the salesman which model is best for which fruit, and which accessories are available with which models.

A centrifugal juicer uses a high-speed blade to shred the fruit or vegetable into pulp, which is then spun at high speeds to separate the pulp from the juice.  This process is versatile and can juice almost any fruit or vegetable. 

The advantages to the centrifugal juicer are speed and affordability while sacrificing some of the nutrition you would get from grinding/squeezing.  The centrifugal juicer is the most popular juicer for restaurants and juice bars.  The Nutrifaster N450 and the Zummo Z-22 are both models of centrifugal juicers that we recommend.

The third type of juicer is a cold press (also known as a hydraulic press).  The cold press uses a high amount of pressure to squeeze the fruit without producing heat so they are able to keep more of the nutrients intact. 

When compared to centrifugal juicers, cold presses produce higher yields, maintain more nutrients and have more versatility with the ability to juice nuts and leafy greens.  The main drawbacks are that they are more time consuming and they cost more.  The cold press is perfect for operations that want to produce their product in bulk.   The Freshly Squeezed FS line of cold presses (FS-8.5 countertop, FS-12, FS-20 PLUS and FS-30 PLUS) and the Zumonat are great examples of this type of machine at an affordable price.
